I would like know for a report: what are the most important applications for GC-MS. I read that 25% are enviromental experiments. What are the rest 75%?

do you have numbers about this? Is there web pages with statistics? Also: many Epa methods use GC-MS. There are so many Epa method. Which one is most important most used?
I would like to do a table wich has data like "10% of MS users analyze chlorinated pesticide with Epa method No.123/ 17% do parfumes using ISO 456/ etc."
Where I can find this data?

At the risk of sticking my neck out I think that what you are trying to is not really practicable. Nearly all applications are important in their field. Perhaps you could tell us more about the purpose of your report and the level of knowledge that you have about chromatography. That way we might be able to help you more and point you in the right direction.
