Can anyone offer me some insight to the measurement of malic and citric acid in ethanol. I have come across some literature stating that the acids have a tendency to degrade in the presence of sulphuric acid. Any help is much appreciated.

They certainly will degrade in hot concentrate sulfuric and they will not in dilute.
Malic is easy to do with any of the "aqueous" coulmns. My favorite is the ES Industries column. I think it will elute just fine in 100% water with a few tenths % phosphoric acid. If not, add a small amount of acetonitrile. I can't remember if citric is held up adequatly under these conditions, but my guess is that it will be. If you are lucky, ethanol will not elute on top of the acids. A sulfonated polystyrene column (eg Biorad) will also work for these acids if the ethanol does not elute at the same place. You may have to dilute the ethanol to get a good peak shape.
