Very carefully....
There are many references out there for this - check pubmed, the journal of agricultural and food chemistry to start. Shouldn't be too terribly hard with reversed phase / uv or PDA detection.
Lycopenes are found in tomatoes - I believe they're anti-oxidants.

Any method that can be used for Carotenes can also be used for Lycopene.
